RECIPE:

  • 450 grams (2 cups) of butter or 480 ml (2 cups) of ghee or 480 ml (2 cups) of coconut oil

  • 15 - 30 ml THC oil (depending on your tolerance)

  • Heatproof bowl and pot or double boiler

  • Cheesecloth or nut-milk bag (Buy a nut-milk bag: $3 from Bed Bath & Beyond)

  • Jar for storing

  • Time!

Directions:

  1. Fill a pot with about 5 cm of water and bring to a very gentle simmer. Place your heatproof bowl on top. Add butter (or ghee or oil) and 15 - 30 ml THC oil to the bowl.

  2. Stir the mixture every 10 to 15 minutes, ensuring the fat never gets hot enough to bubble. Add more water to the pot as it evaporates, and let the infusion go for a total of about 2 hours.

  3. Remove from heat and let it cool enough that you can comfortably touch it without it solidifying. It should remain liquid for straining out the infusion.

  4. Pour the fat through a cheesecloth or nut-milk bag into a jar. You can give it a gentle squeeze but avoid being too aggressive, as you may extract more bitter flavor components from the plant material.

Once strained, you'll have an infused butter or oil ready to use. Store it in the fridge for up to two weeks or, after solidifying, place it in a freezer-safe container or roll in parchment and store in the freezer for up to three months.

Step 3: Use cannabis-infused butter or cannaoil in recipes

Before cooking or baking with your infusion, test the dosage. This varies from person to person and depends on the freshness, quality, and THC levels in the oil used. Try spreading ¼ teaspoon of the cannabis-infused butter or cannaoil on a cracker or bread and assess how you feel about 1 hour later. Adjust the dosage accordingly.

Calculate the dosage when using the fat in a recipe. For example, if a recipe for 12 cookies calls for 225 grams (1 cup) of butter and your preferred dosage is ½ teaspoon, replace 57 grams (1/4 cup) of butter with your infusion. For precision, convert the butter measurements to grams and use a kitchen scale to measure both the infused and non-infused fat, especially when making larger batches of baked goods.

Now it's time to experiment and enjoy!
